A few choices in a remodel are effectively permanent once the wall closes. Where the drain and vent run. Whether there is a shutoff at each fixture and whether you can reach it. Whether the supply is sized for what the new fixtures will actually pull. Whether there is any access left to the valve body behind a shower.
Everything else in the room can be changed later at reasonable cost. These cannot, which is why they are worth deciding deliberately rather than defaulting to whatever is quickest during demolition.
A remodel is the one moment when the pipe behind the wall is accessible and cheap to address. If a house still has galvanized supply lines, original angle stops that no longer seal, or a drain section that has been marginal for years, doing it during the remodel costs a fraction of doing it later through finished surfaces.
The same goes for shutoffs. Good, accessible quarter turn stops at every fixture make every future repair simpler and make it possible to isolate one fixture instead of shutting down the house.
Sink and faucet installation, toilet replacement, tub and shower valves, laundry connections, and the supply and drain work that goes with any of it. Where a remodel involves a water heater relocation or an upgrade to tankless, that is handled by the same crew.
